Quinoa Stuffed Bell Peppers



Stuffed bell peppers are one of my favorite things to eat and they are very attractive in terms of presentation. There are tons of stuffed bell pepper recipes out there, but, in my opinion, they are either too complicated, or too full of calories. I prefer quick and easy when it comes to making weeknight meals, and they have to be delicious and healthy at the same time. I came up with my own variation of stuffed bell peppers to satisfy my own requirements.

Ingredients


- 1 cupped uncooked quinoa cooked according to directions
- ½ onion
- Garlic cloves
- Olive oil
- 2 Roma tomatoes, diced
- 1 Grilled chicken breast, diced (optional)
- ½ cup diced celery
- ½ cup sliced Mushrooms
- 6 bell peppers (red, green, or yellow) tops removed, and cored and seeded
- 1 tsp. cinnamon
- 1 tsp. cumin

Directions


1. Preheat oven to 350
2. Sautee onions and chopped garlic in olive oil
3. When onions become translucent, add in diced celery and mushrooms
4. Stir in cooked quinoa, diced tomatoes, grilled chicken, cinnamon, and cumin
5. Divide mixture into bell peppers
6. Place in greased 9x13 inch baking pan and cover with tinfoil
7. Bake until filling is hot throughout and peppers are softened. (about 1 hour)
8. Enjoy
Quinoa stuffed bell peppers are a perfect way to get nutrition while still satisfying your taste buds. This is a general recipe that can be altered to your personal liking! Enjoy!
