Baked cabbage recipe (zapekanka)

This baked cabbage recipe is probably the easiest of all. It is tasty, low in fat,and vegetarian. It can be made vegan easily. It contains fiber and fair amount of protein. In Russian it is called "Zapekanka", and is one of the favorite meals of Russian cousine, something in between casserole and pie.

 

Russian baked cabbage recipe

This recipe for baked cabbage is adopted from Povareshki.

Ingredients:

  • 1 lbs cabbage thinly sliced ( Using Borner mandoline slicer will make this job fast and effortless)
  • 1x1 inch cube of cheese, grated
  • 2 eggs or 2 tbsp milled flaxseed
  • 2 tbsp whole-wheat flour
  • 1 clove of garlic
  • salt, pepper, herbs to taste ( rosemary, oregano or herbal spice mix)
  • oil and bread crumbs


Directions:
  1. Mix all ingredients but cabbage
  2. Shred cabbage, put it in the collander and pour boiling water over it. Drain and add it to the mix
  3. Oil the pie shell and thinly distribute bread crumbs. Add the cabbage mixture.
  4. Cook for about 40 minutes at 200 degrees ( low heat), and if the crust becomes too crispy too early, cover it with foil.

Serve as a side dish.
