Where do I get cooked chickpeas?

by Melody

Hi, I have a question that may be silly, but I'd love to know the answer.
I've copied your Moroccan Chickpea Stew Recipe, and look forward to making and eating it! However, I've never seen chickpeas in any other form than canned. When you say "cooked chickpeas," where do you buy them and how do you cook them, or do you buy them cooked, somehow?

Thanks.

Buying and cooking chickpeas

by Olga

Hello Melody,

glad you asked! Chickpeas, or garbanzo beans, are sold dry, in the dry beans section of the supermarket. They look a lot like haselnuts. They are very easy to cook: just soak them in the cold water overnight (or for a day) to reduce cooking time, discard water, rinse your chickpeas, and then boil them. You can boil them without soaking, just be prepared to double boiling time.

Use 3 parts of water for 1 part of soaked chickpeas, and 5 parts of water for dry garbanzo beans.

Boil on the high heat for 10 minutes, reduce heat, and simmer soaked chickpeas for about 30 minutes.

Cook in bulk to save yourself some time, as chickpeas freeze very well. You have a choice - put some in your hummus, make chickpea stew, and freeze the rest.

You are perfectly fine starting with canned beans; just wash off the liquid and use them in your cooking. It is better to use canned beans than not to use any.

If you like that Moroccan chickpea stew, you may like dry apricot hummus or Squash hummus. It's similar in taste, sweet'ish, and full of fiber and other goodness.

Best regards,
Olga
