Of course, if you replace applesauce with butter and whole wheat flour with white flour, they will taste even better. But you shouldn't do it, because you want a meal that makes you feel satisfied (pancakes tend to do this to people) without feeling like a sinner, or even worse, a failure.

And if you use egg replacer instead of eggs, it becomes vegan oatmeal pancakes recipe (in case you care.) It remains guilt-free so you can indulge yet stay on track of becoming (remaining) a superwoman.

Healthy oatmeal pancakes recipe with no guilt added

Inspired by Oatmeal Pancakes by Jill Harris. Link to original recipe became broken and was removed.

Ingredients
  • 1 ½ cups rolled oats
  • 2 cups rice milk or almond milk
  • 1 cup whole wheat flour
  • 1 tbsp.brown sugar
  • ½ tsp. cinnamon
  • 1 tsp. vanilla extract (optional)
  • 2 eggs, beaten ( or egg replacer if you are a vegan)
  • 100 g applesauce ( 1 cup Mott's Fruitsation)
  • 1 tbsp baking powder or 1 tsp baking soda plus 1 tsp vinegar
Directions:
  1. Mix oats, applesauce and milk in the large bowl and let stand 5 minutes.
  2. Add whole wheat flour, sugar, cinnamon and eggs ( or egg replacer).
  3. Mix well. Add baking powder. If you don't have baking powder handy, use this simple Russian trick: place a teaspoon of soda on the surface and add a teaspoon of vinegar on top of it. Once you see the bubbles, mix them and quickly stir it in to the pancake mix.

  5. Add 1/2 cup frozen blueberries if you want.
  6. Cook over medium-high heat on a grill or frying pan sprayed with oil. Leave some space in between the pancakes as the batter is runny.
  7. Serve with maple syrup, yogurt and berries. You can serve them with peanut butter and banana slices.

I made 13 pancakes about 3 inch in diameter.
Warning. Just because these pancakes are so healthy, it doesn't mean you can add loads of maple syrup and pretend like it is perfectly OK. It is not. But a little bit of maple syrop with some yougurt and berries will certainly make an wholesome, delicious guilt-free Sunday breakfast. Enjoy!
