Healthy oatmeal pancakes recipe - great healthy breakfast idea!

The best time to make this healthy oatmeal pancakes recipe is when you are on the diet, and you've had it. You know it when you start hearing those voices in your head, sneakily calling for you to live your life to the fullest. They remind you that we live only once, and that this free piece of pizza won't be there when you are finished with your silly diet.

Whatever your noble goal was with that diet, you suddenly cannot handle eating same old cereals anymore. Another bowl of cabbage soup or delicious cottage cheese and you are ready to go kill someone....Or just quit!

Wait, don't quit.

I am serious. Make these pancakes. This is the tastiest, healthiest edible oatmeal pancakes recipe that I have cooked. And I have tried a lot. Of course, if you replace applesauce with butter and whole wheat flour with white flour, they will taste even better. But you shouldn't do it, because you want a meal that makes you feel satisfied (pancakes tend to do this to people) without feeling like a sinner, or even worse, a failure.

And if you use egg replacer instead of eggs, it becomes vegan oatmeal pancakes recipe (in case you care.) It remains guilt-free so you can indulge yet stay on track of becoming (remaining) a superwoman.

Suitable for weight loss and exercise (muscle gain) programs and for many healthy diets. Good for Weight Watchers, good for your heart, perfect for your cholesterol.

Inspired by Oatmeal Pancakes by Jill Harris. Link to original recipe became broken and was removed.

  • 1 ½ cups rolled oats
  • 2 cups rice milk or almond milk
  • 1 cup whole wheat flour
  • 1 tbsp.brown sugar
  • ½ tsp. cinnamon
  • 1 tsp. vanilla extract (optional)
  • 2 eggs, beaten ( or egg replacer if you are a vegan)
  • 100 g applesauce ( 1 cup Mott's Fruitsation)
  • 1 tbsp baking powder or 1 tsp baking soda plus 1 tsp vinegar
  1. Mix oats, applesauce and milk in the large bowl and let stand 5 minutes.
  2. Add whole wheat flour, sugar, cinnamon and eggs ( or egg replacer).
  3. Mix well. Add baking powder. If you don't have baking powder handy, use this simple Russian trick: place a teaspoon of soda on the surface and add a teaspoon of vinegar on top of it. Once you see the bubbles, mix them and quickly stir it in to the pancake mix.

  5. Add 1/2 cup frozen blueberries if you want.
  6. Cook over medium-high heat on a grill or frying pan sprayed with oil. Leave some space in between the pancakes as the batter is runny.
  7. Serve with maple syrup, yogurt and berries. You can serve them with peanut butter and banana slices.

I made 13 pancakes about 3 inch in diameter.
Warning. Just because these pancakes are so healthy, it doesn't mean you can add loads of maple syrup and pretend like it is perfectly OK. It is not. But a little bit of maple syrop with some yougurt and berries will certainly make an wholesome, delicious guilt-free Sunday breakfast. Enjoy!
