French green pea recipe - high protein

This green pea recipe comes from France - simple and low in calories, it also is a high protein vegetarian dish. French green pea recipe

This recipe is so simple and so good for you. One portion provides 300% of your daily need for Vitamin A, 90% of Vitamin C, and whopping 20% of Iron.

Ingredients:
  • 1 head Romaine or butterhead lettuce, chopped
  • 1 tbsp extra-virgin olive oil
  • 1 lbs or 500 g of frozen green peas; alternatively, use drained canned green peas
  • 2 large onions, chopped
  • 1/4 cup hot boiling water
  • 1/4 tbsp sugar
  • 2 tbsp fresh dill ( or 1 tbsp dried)
  • Salt, black pepper to taste

Directions:
  1. Place chopped onion, lettuce, sugar, oil, and frozen peas in the pot and add hot boiling water.
  2. Cover with a lid, reduce heat and cook for 20 minutes.
  3. Drain the water, add salt, pepper and dill. Serve hot.

Yields 4 servings, approximately 180 calories per portion.
