Traditional Russian Red Cabbage Stew

Red cabbage stew with apples is a traditional Russian meal prepared during winter and early spring, when vitamins are scarse, and immune system requires a boost. Sweet and sour, with a hint of spice, this red cabbage stew recipe has a chance to become one of your favorite red cabbage recipes. This meal has great antibacterial and immune-boosting properties, and is wonderful for a weight loss diet because it is very low in calories. For those on the cabbage soup diet, those who know how repetitive it gets, this stew is a great alternative to a cabbage soup.

Note that it is just as good when cooked with green instead of purple cabbage.

 

Russian red cabbage stew recipe

This red cabbage recipe is suitable for a vegan weight loss diet.

Ingredients:

  • 1 lbs ( 500g) red cabbage, thinly shredded
  • 3 apples, preferrably sour type
  • 1 onion
  • 2 tbsp sugar
  • 1 tbsp oil
  • 1 tbsp apple cider vinegar
  • 1/4 cup water
  • cloves, black pepper and salt to taste


Directions:
  1. Core apples, remove skin and slice thinly - 1/2 apple to 8-10 slices
  2. Cutting cabbage: cut cabbage head in halves along the stem, and each half in halves, again along the stem. Place a quarter cabbage on the cutting board. Thinly shred, cutting perpendicular to the stem. Use Borner mandoline slicer if you want to make this job effortless.
  3. Heat large skillet with 1 tbsp of oil
  4. Shred the onions; add them to the skillet, cover with a lid, and fry for 5 minutes
  5. Add and mix vinegar, water, cloves, and pepper.
  6. Add cabbage and apples, stir them, cover with a lid, and let your stew cook for 15 minutes on the medium heat. Stir it from time to time and remove from heat when cooked red cabbage is soft.
  7. Serve as a side dish. Eat as is, or add sour cream and dill.
